StirCrazy: Stir Fry Beef & Veggies


Well we are all in the crazy pandemic together. When I mean together, I mean 6 feet distanced and not breathing...actually better yet, just isolate yourself and make this stir fry. Social distancing was not a phrase I knew last week and suddenly I'm using it in every sentence and I stand behind it as if the world's life depends on it! Literally, lets be socially responsible people. The reason I am making these meals for you is for you to kill time! Kill time and eat well amiright.


You have time to cut all your veggies beforehand. Do so diligently please.


You also have time to marinate your beautiful sirloin for 15 minutes while your cut your veggies. So slather your garlic and minced ginger on that meat. While you wait the veggies can be cut and sauce can be made. Once the 10-15 minutes are up, slice the steak into cubes. Heat up your pan with some ghee and once hot, add the cubed steak.


The sauce is really easy to make. I love mother in laws gochujang. It's a Korean chili paste that gives more flavor than kick. this can be purchased at all wholefoods.



After the steak has been cooking for 5-8 minutes, removed steak, leaving juices, from pan and add veggies. Sautee for 3 minutes return meat to pan and add sauce.

Top with crushed cashews and green onions


Ingredients:

1.5 lbs sirloin steak

1 tsp minced garlic

1 teaspoon kosher salt

1/2 teaspoon black pepper

2 tablespoons + 1 teaspoon ghee

1 teaspoon toasted sesame oil

1/4 - 1/2 teaspoon crushed red pepper flakes (or to taste)

1.5 inch knob of ginger, peeled and julienned

2 cups green onions, julienned (about 5 green onions)

2 cups chopped broccoli

1 cup sliced red pepper

2 cups carrots, julienned (or 1 medium carrot)

2 cups celery, julienned (or 2 stalks celery)

Sauce:

1/4 cup coconut aminos (I like braggs brand)

1 tablespoon rice vinegar

1 teaspoon fish sauce (I like Red Boat brand)

1 tablespoon maple syrup

1/4 teaspoon ground sichuan peppercorn (or sub Chinese Five Spice Powder)


Directions:

Steak: Cover steak with minced garlic and ginger, let marinate for 10-15 minutes. While marinating, chop broccoli, red pepper, carrots and celery. As well the sauce including aminos, rice vinegar, fish sauce, maple syrup and ground sichuan peppercorns. Once done, chop steak into 1/4 inch cubes and heat pan over high heat. Add Ghee and steak and let cook for 5-8 minutes. You do not want the steak to be fully cooked but rather medium rare.


Veggies: Removed the steak, leaving the juices, leftover ginger and garlic and add all the veggies besides the green onions. Sautee and toss the veggies for 3 minutes then add the sauce and meat back to pan. Let the sauce simmer and will thicken slightly after 6 minutes. Check the steak to your likely and remove from heat


Topping: You can add crushed cashews, green onions and aside of rice. ENJOY
