Did you know it’s an aphrodisiac? Apparently goddess Aphrodite came to earth in a shell of a scallop. Accurate? Not sure...it’s all legend anyways! So eat something sexy!
Bok Choy and mushrooms:
1 tbsp olive oil 4 garlic cloves - minced
2 tsp peeled grated ginger 10-12 baby bok choy - sliced in half lengthwise1 tsp soy
12 oz chopped shiitake mushrooms
2 tbsp grapeseed oil - ¾ lb scallops - patted dry
1 tsp sesame oil ½ tsp salt
Put 1 tbsp of olive oil in skillet over medium high heat. Once the skillet has heated up for about 1 minute, cook the scallops, working in 2 batches. Place the scallops in the pan and sear for 1-2 minutes, until browned. Flip and sear for 1-2 more minutes. Remove scallops from the skillet. Add 1tbsp of olive oil in the pan and repeat with remaining scallops. Then set aside
Reduce the heat to medium low,
heat 1 tbsp of grapeseed oil in skillet and add ginger and garlic for 1 minutes sauté then add mushrooms for 2-3 minutes then add sliced boy choy for 4 minutes or brightly colored green and softened yet crunchy. Add soy sauce and sesame oil, cook for 1 more minute and removed from skillet.
Place the bok choy in a serving dish. Top with scallops and pour pan sauce over the scallops and bok choy.
