Sexy Scallop S'Meal with bokchoy & mushrooms

Make this for your loved one. Why? Bc you love them & want to inspire them to stay with you. Actually with everything going on they don't have a choice and...nothing says more ❤️ than a SCALLOP. Did you know it’s an aphrodisiac? Apparently goddess Aphrodite came to earth in a shell of a scallop. Accurate? Not sure...it’s all legend anyways! So eat something sexy!




Ingredients:

Bok Choy and mushrooms:

1 tbsp olive oil 4 garlic cloves - minced

2 tsp peeled grated ginger  10-12 baby bok choy - sliced in half lengthwise1 tsp soy

12 oz chopped shiitake mushrooms

2 tbsp grapeseed oil - ¾ lb scallops - patted dry

1 tsp sesame oil ½ tsp salt


Instructions:


  1. Put 1 tbsp of olive oil in skillet over medium high heat. Once the skillet has heated up for about 1 minute, cook the scallops, working in 2 batches. Place the scallops in the pan and sear for 1-2 minutes, until browned. Flip and sear for 1-2 more minutes. Remove scallops from the skillet. Add 1tbsp of olive oil in the pan and repeat with remaining scallops. Then set aside

  2. Reduce the heat to medium low,

  3. heat 1 tbsp of grapeseed oil in skillet and add ginger and garlic for 1 minutes sauté then add mushrooms for 2-3 minutes then add sliced boy choy for 4 minutes or brightly colored green and softened yet crunchy. Add soy sauce and sesame oil, cook for 1 more minute and removed from skillet.

  4. Place the bok choy in a serving dish. Top with scallops and pour pan sauce over the scallops and bok choy.
