Secret Ingredient Banana Muffins

Every person needs a good to Banana recipe. Why? Because bananas are staples in the kitchen and more often than not, they go bad. That nawwing feeling watching your nanners go from yellow, to spotty to larger spotty...to smelly & suddenly fruit flies arrive! YES we all know this and the best way to avoid RIP bananas is to make banana bread. Particularlly this recipe because everyone loves it and you will become your neighbor's betty crocker.




The secret is none other than pudding. It creates a dense muffin that holds mositure and obviously that is the essence of good muffins/bread. With the soft yummy inside and a crisp brown sugar exterior you will have a hard time not eatting mulitple muffins in one sitting.




I've been asked to bake these as bread and sold 12 at a Santa Monica bake sale. I've had this requested late at night and early morning to have for breakfast. Having these on hand will make your very popular and its simple enough my 11 YO and 7 YO kids (I'm a private chef for a family of 4 in Venice) LOVE helping me making these.



THE BEST SECRET INGREDIENT BANANA BREAD


Prep Time:10 mins Cook Time:30 mins


Ingredients 2 cups mashed bananas (about 3/4 small/medium bananas)

½ cup (1 Stick) butter,

softened1¼ cups brown sugar

2 eggs

â…“ cup greek yogurt

1 tsp vanilla extract

2 tsp cinnamonpinch of nutmeg

2 cups all-purpose flour

1 tsp baking sodapinch of salt

1 box vanilla pudding (just dry)

Instructions Preheat oven 375, prep muffin tins with muffin cups and/or cooking spray Start with a medium bowl and smash the bananas with a fork. Add wet ingredients, butter, eggs, greek yogurt, vanilla and combine. In a separate large bowl combine dry ingredients including brown sugar, cinnamon, nutmeg (set ¼ cup aside)  flour, baking soda, salt and pudding mix. Slowing incorporate wet bowl into dry bowl, try to not over mix. Add mixture to prepared muffin tins and top with brown sugar mixture that was put aside in step 3. put into oven for 25-30 minutes. Check with toothpick if fully cooked, remove from oven and place muffins on cooling rack (leaving them in the pan will continue to cook them). Enjoy, with a cup of coffee, side of ice cream, but best enjoyed with friends
