Easter is tomorrow SO CARROT EVERYTHING. I was requested to create a Easter themed dessert that can work with a very specific elimination diet. Protein balls were the best bet to meet those standards. Nutty goodness that had a perfect amount of crunch and sweetness to remind you of those grandma carrot cake days. Its vegan, dairy free and delicious. Also with plant based protein to help make this more satisfying and fueling.
I did not have a zester so i just peeled orange skin into the food processor and it worked great. Also check out my vegan pesto ^ in the bottom of that photo.
Ingredients
1 cup firmly packed grated carrot (1.5-2 carrots) 1 cup pecans 1 cup finely shredded coconut 2 tbs almond butter Zest from 1 orange 2 tbs maple syrup or honey 2 tbs coconut oil ½ tsp cinnamon
4-6 dates
1/2 cup oats
1/3 c. Juice Plus + Vanilla Complete
1/2 finely grated coconut (set aside)
Directions:
If carrots are not grated, add to food processor and blend. Add rest of ingredients (but finely grated coconut) and blend till preferred. Once it passes the taste test spoon about a 1.5 teaspoon and roll into ball and roll into grated coconut shreds. Enjoy!
